In this article, the antioxidant activity of the capsaicinoid fraction of red pepper Сapsicum Annuum L.. was studied. It was established that capsaicinoids in low concentrations significantly prevented the accumulation of MDA in membranes. The results obtained confirm that the capsaicinoid fraction has high antioxidant activity.
