Abstract

A technological scheme for processing mulberry fruits into juices and concentrates has been developed. Based on the analysis of all processes included in the technological scheme, a line was assembled, including pressing juice, cleaning freshly squeezed juice from mechanical impurities, fermenting and clarifying juice, filtering and obtaining clear juice, evaporating and obtaining juice concentrate.
